Ses graines servent principalement de matière première pour l'extraction d'huile utilisée comme assaisonnement et en cuisine, ainsi que pour la production de beurre d'arachide. Une part importante de la production d'arachide est utilisée comme aliment de base : les arachides grillées consommées telles quelles ou utilisées comme condiment, notamment dans la préparation de sauces réputées. Au Bénin, la consommation de graines est estimée à 12 kg par personne et par an. Seules les variétés hâtives, avec un cycle de moins de 100 jours, sont cultivées en Afrique. Les arachides de type oléagineux doivent combiner des rendements élevés avec un pourcentage élevé de décorticage (environ 70%) et une teneur élevée en matière grasse (50%), tandis que les arachides destinées à la consommation directe doivent avoir une faible teneur en matière grasse (moins de 50%) et un poids élevé des graines (plus de 150 g pour 100 graines). En général, les arachides vendues en coque sont destinées à la consommation directe, tandis que les arachides décortiquées sont utilisées dans la confiserie. Les feuilles d'arachide correctement récoltées et séchées ont une teneur en protéines de 14 à 16% et une forte valeur fourragère (0,4 VF/kg). En moyenne, 100 kg de gousses (coques) donnent 70 kg de graines contenant 30 kg d'huile ; avec une extraction industrielle par pression, les rendements peuvent atteindre 45%, mais le tourteau résiduel (50%) convient uniquement à l'alimentation animale. Les procédés traditionnels tels que le broyage éliminent une partie des germes et de l'enveloppe de la graine, entraînant une diminution d'environ 7% du total des produits transformés. Ils ne permettent de libérer que 60% de la teneur en huile des graines, mais ils produisent un sous-produit de haute valeur nutritionnelle appelé "galette" ou "KLOUKLOUI", enrichi en protéines (35%) grâce au processus d'extraction.
